Crunchy Melt in your mouth Butter Cookies!

I’ve taken a hiatus from brownies, because I’ve recently been reminded and inspired by a tin of cookies which we had in HK last year. In laws were in town lately and I managed to get together with my sis-in-law who shares my interest in baking, and we experimented to achieve the cookies from Jenny Bakery which has long queues leading to her little minimum renovated shop, all for her tins of cookies. Choose from a tin of 8 or 4 flavours - HKD 88 for a small tin. That’s about S$18. Not too bad by my standards, cos I would pay for delicious food anytime hehe.. very much like HKers.

So… here are the cookies… still experimenting but everyone who got their hands on the trials are already smacking their lips. The satisfaction of seeing the eyes opening wide followed by a big grin and then, the fingers prying open the lid in desperation for the next cookie.

I’m more or less done with the experiments, just deciding which flavours to create.

Seen above: Cherry bit, Almond Crunch, Mocha, Koffee, and.. drum roll… choc cookies made with Varlhona 70% chocolate! with Herseys choc chip or almond bits : ) YUMMY.. oh Nicole (my 5 year old would say..”Yum Yum, Yum in my Tum!”)

And dig this… my pineapple tarts are decided by her friends in HK to be BETTER than Jenny Bakery’s!!! WHOOHOO! A whole container was wiped out in 2 days, together with brownies she lugged back to HK - Needless to say. *GRIN*

Oatmeal Raisin Cookies

Chewy chewy chewy with the slight crunch! Delicious Oatmal Raisin cookies that leaves you craving for more. Be sure to keep the cookie tin close under your watchful eyes. Speaking from experience because cookie thieves are always sneaking up on my cookie tin when I am on conference calls. haha

Buttery Pineapple Tarts

My loyal fans call these pineapple balls because of their shapes. These came from growing up with my mum’s pineapple tarts which every year, friends of hers would eagerly await her giveaways. It’s embarassing but I love these tarts so much myself, I swipe them fresh from the oven and have to keep reminding myself to leave enough for others!

Double Choc Chip Cookie

Was very happy to make these cookies for K who was giving these away as favours. YUP.. giant Chocolate chip cookies with a chocolate base - soft chewy sort. I am still working very hard towards the legendry Mrs Fields Choc Chip Cookie.. almost there la.
